He descubierto que el siguiente código en MainSessionNavHostFragment.kt sólo establece el agente de usuario en la apertura/carga inicial de la aplicación. En las siguientes visitas a la página, se vuelve a la cadena de agente de usuario WebView por defecto:
Alternativamente, he estado intentando (y fallando) acceder al objeto de sesión principal dentro de la clase MainActivity. De esta forma puedo intentar establecer el agente de usuario en el método onCreate, que es donde StackOverflow me dice que debería establecerse.

User-Agent or also known as User Agent is a text header that serves to identify the user who enters a web page through the browser. It is basically part of the HTTP request that we send and that reaches the destination server.
